Being at home most of the time doesn’t mean you don’t need your carbs and your nutrition! Take care of yourself and your loved ones with these nutritious meals with easy-make recipes.
1. Apple & Cinnamon Baked Toast
Ingredients: 40g of oats, 1 egg, 1 apple (grated), 4 tablespoons of yogurt, 1 tablespoon of maple syrup, Level teaspoon of cinnamon, ½ teaspoon of vanilla extract.
Method: Line a baking dish with baking paper, then preheat the oven to 180C. Next, mix all of the ingredients together in a bowl, then spoon it into your dish. Pop the dish into the oven for 30 minutes until it turns golden. Finally, serve with a dollop of yogurt, flaxseed, toasted nuts, almond or peanut butter. Add a drizzle of maple syrup. Some diced apple fried in maple syrup would also be delicious!
2. Spiced Winter Cookies (edible ANY time of the year!)
Ingredients: 160g of plain flour, ½ teaspoon of baking powder, ½ teaspoon of ground cinnamon, ½ teaspoon of ground ginger, ¼ teaspoon of ground all-spice, 3 tablespoons of light brown sugar, 2 ½ tablespoons of milk, 60g of butter (softened to room temperature).
Method: Create the dough and let it cool. Roll it out and use cookie cutters to create any shape you like. Bake and decorate with white icing from a piping bag. These cookies will last a few days in an airtight container.
3. Schezwan Fried Rice (an Indo-Chinese recipe of rice in Schezwan sauce)
Ingredients (for the rice): 3 tablespoons of olive oil or any other oil, 2 cups of half Boiled Rice and 1 Chopped Carrot, 1 Chopped Green Capsicum, spring onions, 6-7 Garlic cloves, 3-4 Chillies, 2 Onions, salt & pepper.
Ingredients (for the sauce): Ready-made Schezwan sauce or chutney, vinegar, soya sauce, Red chilli powder, ginger garlic paste, 1 tablespoon of oil.
Method: Heat some oil in a pan. Add the onions, chilli and garlic. Once they are cooked, add in the carrots, capsicum, and all the spices. Then add in the rice and let it all cook. Once done, add in the sauce and garnish with spring onions and chilli flakes.
P.S.: If you don’t have Schezwan sauce, you can make a substitute with roasted and peeled tomatoes, 3-4 cloves of garlic, green and red chillies, and some nice salt to bring out the rice’s flavour.
4. Homemade Chocolate Chilled Cream (can be used for all sorts of dessert, including crustless pies!)
Ingredients: 2 cups of heavy cream, ½ cup of powdered sugar, ¼ cup of unsweetened cocoa
Method: Mix it all together in a chilled mixing bowl and a whisk. Mix on medium-fast for 4-5 minutes. Store in the freezer in a pie dish. Yummy!
5. Oreo Mug Cake (3 ingredients, only 5 minutes)
Ingredients: 6-8 pieces of crushed Oreos (depending on the size of your mug), 3 tablespoons of milk, Cadbury Dairy Milk Chocolate.
Method: Crush all the Oreos and empty it into a mug. Pour 3 tablespoons of milk in and mix it until it looks like a brown paste. Then, place 2 blocks of Cadbury Dairy Milk Chocolate in the center. Bake it in the microwave for 1 minute and you’re done! Mmmm-mmmmm!
